Papa Anzóis is produced by the only certified "by-hand" cannery in mainland Portugal. The fish is caught sustainably off the Algarve coast and is complemented with high quality olive oils, lemons and peppers that are also grown nearby. The catch is fished purse seine, which allows smaller fish to swim free and avoids damage to the sea bed. 


Rather than pre-cooking by steaming or frying, they dehydrate their fish over around 20 hours — a slower process that results in a juicier texture, better preserved omega-3s, and more intact skin. The sardines are caught strictly in season between May and November.
